Homemade Nut Milk

Making your own nut milk is super easy! It costs about half as much as the store bought stuff AND you can control what goes in it. Here’s my recipe:

1 cup raw almonds
1 cups filtered water + more for soaking
1/4 tsp. vanilla extract
1 date
Pinch of sea salt

1. The night before, place almonds in a bowl and cover with filtered water. You can read more about why you want to soak your nuts here. In the morning (or after 8+ hours) discard the soaking water and rinse your nuts well.

2. Put your soaked almonds with the rest of the ingredients in your blender and blend, blend, blend!

3. Strain the mixture through a nut milk bag or cheesecloth. Pour the nut milk into a large mason jar or other container. I find that it lasts about 5 or 6 days in the fridge. And don’t throw away the ground up pulp! Nut mush can be used in all sorts of creative and delicious ways (more on that in a future post). Save the mush in the freezer until you’re ready to use it.

4. Sip! Bake! Pour some in your coffee! You can use it anywhere you would use dairy milk.
