Veggie Spring Rolls with Spicy Peanut Sauce

These are the perfect healthy, filling lunch when you’re sick of salads and sandwiches. I usually have all of the ingredients on hand so they’re quick and easy to make.

For the Roll

Rice paper rolls
Lettuce and/or spinach
Yellow bell pepper
Fresh parsley

For the Peanut Sauce

2 Tbs. organic peanut butter
2 Tbs. Tamari or soy sauce
1 tsp. lime juice
1/4 tsp. ginger juice (optional)
2 tsp. Sriracha
1 tsp. peanut oil

1. Cut veggies into thin strips so they fit in the rice paper rolls
2. Combine the ingredients for the peanut sauce, mixing well and adjusting to taste. The sauce should be thin enough to spread around easily, but thick enough to stick to the rolls. You might need to thin it out with some water.
3. Fill a shallow bowl with very hot tap water and quickly dip in a rice paper roll and lay flat. Lay some greens in the middle and top with a few pieces of each veggie and some parsley. Fold the side closest to you over the veggies, turn in each side, and roll the whole thing over the back. It takes some practice and mine still don’t look very pretty, but the taste makes up for it.
4. Dip and enjoy!

I’m sure these would be delicious with some cucumber, shrimp, mango, bean sprouts… whatever you’ve got on hand.
