“Cheesy” Kale Chips

Mmmm kale chips. I’ve been on a big kale chip kick lately. I don’t particularly like raw kale, and chips are a good way to cook them up after the farmers’ market before they start wilting. I’ve been bringing them to my yoga teacher training course for lunch. Tasty and delicious. Here’s my recipe:

1 bunch kale
2 Tbs. olive oil
1/4 cup nutritional yeast
1/2 tsp. sea salt (or to taste)
1/4 tsp. cayenne pepper

1. Cut the stems out of the kale and rip into bite-sized pieces.
2. Toss with olive oil to coat each piece of kale and then mix in the nooch, sea salt, and cayenne.
3. Spread out on a sheet pan and bake at 300° for 25-30 minutes or until crispy.

There are tons of kale chip variations you can cook up- I’ve tried Sriracha, lime, and soy sauce and even a coconut oil and chocolate, but these are my favorite. Experiment!
